Recipe Box: Almond Joy Scones

Do you like Almond Joys? Yum. When I came across this recipe I just had to give them a try. Super easy to make.

Almond Joy Scones

1 cup all purpose flour
1 cup wheat flour
1 cup almond flour
2 tbs. sugar
3 tps baking powder
1/2 tps baking soda
3/4 tsp salt
1 1/2 sticks unsalted butter, cold and cut into cubes
1 egg
3/4 cup plus 2 tablespoons buttermilk
1/3 cup shredded coconut
1/3 cup slivered almonds
1/2 cup mini choco chips

1. Preheat oven to 400 degrees.  Line two baking sheet with parchment paper or spray with cooking spray.
2. In bowl, whisk together flour sugar, baking powder, baking soda, and salt.
3. Toss the cold butter cubes into the flour mixture. Cut together butter and flour either with fingers or pastry cutter. Work until there are crumbles of butter the size of peas and oats. Put in fridge for a few minutes.
4. Whisk together buttermilk and egg.
5. Take the flour/butter mixture out of fridge and add coconut, almonds, and chocolate chips. Mix together and create a well in the center of the mixture.
6. Add the buttermilk and egg all at once to the well.  Use a fork to bring ingredients together. Mixture will be shaggy.
7. Flour a work surface and dump the shaggy dough mixture out onto the counter.  Bring together the dough with your hands into a 1 1/2-inch thick round disk.
8. Use round biscuit cutter or water glass to cut out biscuits.
9. Place biscuits on the baking sheet. Brush with beaten egg white and sprinkle with course or regular sugar.
10. Bake biscuits for 14-18 minutes, until golden brown.  Remove from the oven.
11. Enjoy!

Original recipe can be found here.

I was extremely lazy and didn't want to toast my almonds or coconut. I'm sure it would have given the scones a bit more flavor. I think next time I may add a bit of almond extract.

I also didn't have any buttermilk on hand. Sure was prepared to make these, huh? So I used 1/2 cup regular milk, 1/4 cup heavy cream, and 2 tbs. of almond milk. (My fridge had every type of milk except buttermilk...) I'm sure you could all regular milk. But I like to experiment.

30 Days of Color: Day 27

We are reaching the homestretch with these color palettes!

This is pretty much what my counter looks like right now. It's full of chocolate chip cookies and french macaroons I got from a lovely little bakery in downtown Fargo, Nicole's Pastries. So delicious. If you live in that area, you MUST check it out. While I was there I had a Napoleon and it was one of the best things I ate over the weekend (with the exception of the great turkey my Ma made and the ham my Pa made, of course!) My Ma sent home some caramel corn, chocolate covered pretzels, and peanut brittle. I'm going to be running on a freakin' sugar high all week.

Did you go Black Friday and Small Business Saturday shopping? I was woken up at 5 am on Friday to go shopping but it ended up to be the best time. The first wave of people had cleared and the second didn't hit until noon. Got some pretty awesome deals. Who doesn't love those?

Can't believe tomorrow is Monday already...Onto another week. I shall be announcing my photo giveaway tomorrow! Get ready!

Hope you had a wonderful weekend with your family and friends!

30 Days of Color: Days 23, 24, 25, 26

Since I'll be heading homeward for Thanksgiving I figured I would post my Wednesday-Saturday color palettes. I don't go on the internet much at home, unless checking Facebook and Twitter via cell phone counts.

Have a great holiday, a wonderful long weekend, and happy Black Friday and Small Business Saturday shopping!

30 Days of Color: Day 22

This reminds me of home. Excited to go spend a long weekend there with comfort food, my dog, the miniatures, movies with my Pa, and shopping.

So I'm assuming most of you are going out shopping after Thanksgiving...right? Well, head out for Small Business Saturday and support your local shops! Very excited to hit up my faves in downtown Fargo. It's been so long since I've been to them.

Minnesota Beautiful: First Snow

On Saturday we had our first snowfall in Hutch. And then on Monday morning everything was frosted over and pretty. Of course I didn't bring my camera with me to work so I flew home from lunch and went on a walk before it all melted away.

And now today it looks like it's May with slush and mud...

30 Days of Color: Day 21 + Something Else

Image from Pinterest

So I'm thinking that next week after Thanksgiving I may do a giveaway! I'm thinking of giving away 3 photography prints. What do you think? Would you like some new pieces for your walls?

Maybe something like...

I'm also working on re-opening Handmade on Sunday, my little Etsy shop. I have a stack of things I would like to offer up in time for the holidays!

Just working on sorting out the taxes. Ugh...taxes. So if any Etsy shop owners out there have any tips, please, let me know! Lord knows numbers and I don't get along. Nor do I understand half the words and acronyms...

Wise Words for Staying Creative

I'm always afraid I'm going to run out of ideas. And I've still got years and years ahead of me! I think this is a nice little list of ways to keep the brain going.

I have a whole notebook loaded with ideas I want to accomplish. Folders in my hard drive of half started pieces. But after 8 hours of working on various stuff for work, most days the last thing I want to do is sit down and make my brain think anymore. One of these days though, I'm going to get into super graphic design mode and just start pushing out design after design.

30 Days of Color: Day 19

We got our first snowfall today. It seemed ever other part of MN was getting snow except for Hutch. I wasn't very excited for it, but after seeing how pretty things look with a nice blanket of white on it I think I'm ready for the snow.

Beautiful Interiors: Tufted Headboards

Love tufted headboards right now. I found a great DIY tutorial on how to make one. Definitely a must. They add so much drama to a bedroom without going too over the top.
